All nashi pear, skinsy feels, bruised apple hints; honeysuckle and a little stonefruit panna cotta.It's lavishly textured - seeing some 30% of solids included to build texture without sugar - layered, spiced. Skin contact - four hours - sufficient to lend a little blush and aid that textural feel. Generous length.
